Clover Club Cocktail | Classic Raspberry Gin Recipe

A modern interpretation of the classic New York cocktail, the Clover Club combines traditional ingredients with a bold twist. This light, fruity cocktail features a smooth texture from egg white and a hint of sweetness from raspberry jam. It’s ideal for a festive party or a cosy evening with family.

egg white

freshly squeezed lemon juice

6-8 pieces

ice cubes

Method
  1. Squeeze the lemon juice with a citrus squeezer.
  2. Add raspberry jam and gin to the shaker.
  3. Stir with a spoon until the jam fully dissolves and the mixture is smooth.
  4. Add ice, vermouth, egg white, and lemon juice to the shaker.
  5. Shake well.
  6. Strain the mixture and pour it back into the shaker.
  7. Shake again without ice (dry shake) to create a frothy texture.
  8. Strain the cocktail into a coupe glass.
  9. Garnish with a fresh raspberry on a cocktail pick.
